Chipotle Chicken Cornbread Cups

I finally got my hands on this recipe that I told you I tried at the Pampered Chef party I attended. They are yummy, but do have a little bit of a punch, so if spicy isn't your thing, hold off on so much of the seasoning.
1 cup grated cheddar cheese
1 pkg corn muffin mix
1 cup sour cream
1/3 cup flour
2 T. Chipotle seasoning
1 small red bell pepper
1-2 green onions with tops (about 1/3 cup thinly sliced)
1 1/2 cups finely diced cooked chicken
Preheat oven to 350. Combine cheese, muffin mix, 3/4 cup of sour cream, flour and 1 T. of the chipotle seasoning; mix to form a thick batter.
Spray mini muffin pat with nonstick cooking spray. Divide batter evenly among wells. Bake 14-16 minutes or until golden brown.
Meanwhile, finely chop pepper and green onions. Cook pepper 2-3 minutes until it becomes soft. Add chicken and remaining 1 T. of chipotle seasoning. Cook and stir 2-3 minutes or until heated through. Remove pan from heat. Combine chicken mixture, green onions and remaining 1/4 cup sour cream and mix well.
Remove muffins from oven. Immediately press tops of muffins down to form cups. Cool in pan 3 minutes. Carefully remove cups to serving platter. Divide chicken mixture evenly among cups. Top with additional sour cream and sprinkle with cilantro, if desired.

HFH Update

Don't they say "slow and steady wins the race"? Well, I am sure somebody has said something like that. Christie at Baby Tea Leaves wants to know what our inspiration was this week. What keeps you working out? This week, I made more room in my closet and put my "skinny" clothes into a tub. My inspiration is to put that tub back into my closet. I mean, I would have a whole new wardrobe!!! That was one inspiration and the other is to have an updated family photo that I will be happy displaying in my home. It would be nice to have that photo for the holidays.
Now, I didn't change the way I ate, but I was only able to workout 3 times this week. On Sunday I cleaned and organized our basement which I knew would make Baby Tea Leaves and Organized Junkie proud at the same time!!! Man was I sore the next day!!! But even after all of that I only managed to drop 1 lb!! I know, it is better than gaining, but I still wanted more!!!
You know when you are trying to lose weight and you finally go from the 130's to the 120's? Well, I have finally entered the next set of numbers.....and no, it's not the 120's!!!!! Anyway, that will inspire me to lose this week, because I don't want to go back!!!!!

It takes a lot to get by BP up, but.....

I have never been a politically charged person. It doesn't interest me and I have enough drama in my life. I am not saying that I shouldn't take more of an interest, I just don't. Luckily, my husband does, and I can go to him for any of the questions I have. However, I am smart enough to realize that the $700 billion bailout came out of my pocket and everyone that I know. I am also smart enough to know that not only myself, but everyone I know, is having a hard time feeding their family, putting gas into their cars (if they are lucky enough to have a job), heating their house and keeping their lights on. The days of pizza out, movies at the theater and being able to pick something just because it is cute are OVER!!! Knowing all of this, my blood pressure went through the roof when I read this article. The main just of the article goes on to describe how AIG received $85 billion from the government to help rescue it and the very next week their top executives were on a spa retreat that totaled over $440,000!!!!!!!!!! What?!!! They are getting massages, golfing and drinking umbrella drinks with MY money and my family is eating peanut butter and jelly? What is wrong with this picture? I guess it was said that these companies went to the government to ask for help because they had poor management skills and had made some poor judgements and that is why they needed help. I would say they haven't learned their lesson yet. I wonder, if I go out and rack up $200,000 in debt, would the government help me for the "poor management and judgements" I made?

HomeMade Apple Crisp

If there is one thing my husband likes....it is apple pie, crisp, anything along those lines. He loves my grandma's apple pie and I can come close, but not quite to duplicating it. So, when I woke up this morning, there was a recipe cut out of the paper for HomeMade Apple Crisp. I can take a hint!!! I don't like to post any recipes until I have tried it.....like my opinion is the only one that counts!!!! Anyway, I made it, it is super easy and very yummy!!!!! You will need:

6 cups apples, peeled and sliced (5 large apples)
1 cup granulated sugar

Topping:
1 cup butter, slightly softened
1 1/2 tsp. cinnamon
1 1/2 cups rolled oats
1 cup brown sugar
1 cup flour

Preheat oven to 350. Lightly grease a 9x13 pan. Place the apple slices in the pan and sprinkle with the sugar. In a large bowl, with fingers mix butter, cinnamon, oats, brown sugar and flour until mixture is coarse and crumbly. Spoon over the top of the apples. Bake for 45 minutes until crumb topping is golden.

Fall is here....

No, I am not talking about the frost that covered my yard two mornings ago!!! I am talking about the leaves changing colors and wearing sweatshirts to my son and nephew's football games. Along with that, I truly love using my crockpot this time of year. Would you believe that I have never MADE caramel apples?! Well, I have decided to start this year and make it a tradition with my kids. I found this great site, A Year of Crockpotting!!! She has some great recipes and ideas. Menu Plan Monday


Ok last week we started Menu Plan Monday and I liked it, so we are going to continue. I did make a slight change this week. Jake was so proud of what we pulled out of our garden, so I started this week with Sunday.
Sunday: Pot roast, veggies (carrots from our garden!!!) and red skin potatoes (also from our garden). Ok, so we can't start selling carrots for money, but this is the best we've ever grown them and they were yummy!!!

Monday: Homemade Pizza
Tuesday: Philly Steak sandwiches with seasoned fries
Wednesday: Chicken Pot Pie ~ I use Grands Biscuits; cook and cut up my chicken; throw chicken and mixed veggies into a pot with Heinz gravy. It is quick and yummy!
Thursday: Leftovers
Friday: Football game night: Hot Dogs, Pretzels, Popcorn (junk!!!)
Saturday: Chili with Peanut Butter Sandwiches......Hey, don't knock it 'til you try it. I thought it was the most disgusting thing ever until I tried it. Now, I can't eat chili without a peanut butter sandwich!!!!

Here is the book I received from Kellogg's United Through Reading Promotion. You can read about it here. There are packages of Kellogg's products with special tokens (you only need 2 tokens) that you mail in for your choice of one of six books. The book I chose retails for $16.95! I didn't know that!! First Holiday Gift Completed

This is my version of your homemade bath salts that I talked about here. We did peppermint and vanilla. This is a picture of the peppermint one. I made the labels on the computer and had the ribbon and bows in my scrapbook stash. Now I can stick these on my gift shelf and add to any gift basket for the holidays. This was a fun activity to do with the kids. They loved adding the ingredients and mixing it up!
